Healthy Valentine's Day Sweet Treat

Nothing says love like a sweet treat this Valentine’s Day

The Travel Diet is always on the lookout for treats to satisfy our beast of a sweet tooth. For Valentine’s Day 24 Carrots Cafe in Tempe, Arizona shared this healthy Valentine’s Day Sweet Treat. The delectable cookie is vegan, and can be made gluten free.

For the cookies:
2c flour of choice (can sub gluten free flour)
1c lavendar sugar*
1t baking powder
1t baking soda
1/4t salt
1/2c oil
1/4c lavendar water*
1t vanilla extract
1T maple syrup
*lavender sugar: pulse together 1c organic cane sugar and 1/4c dried lavender in a food processor or high powdered blender
*lavender water: seep dried lavender in hot water, strain out the lavender. Allow to cool.
Mix dry ingredients and wet ingredients separately, then combine. On a parchment lined sheet, portion cookie dough (2 T each) about 3 inches apart.

Strawberry Frosting:

1c+2T organic, non-hydrogenated Palm shortening (be sure to check that the brand uses sustainable harvest practices)
2c organic powdered sugar
1/4c blended organic strawberry purée
Mix together with a stand mixer.
Serve up to your sweetie. Watch him or her swoon.
